Nestled among the Pyrenees, on both sides of the French-Spanish border, the Basque country is renowned as much for its fine culinary traditions as for its rugged terrain. Basque chefs are widely considered among the best in Europe, combining their love of fresh, simple ingredients with their time-honored techniques. Tonight, we will dine on garbanzo bean soup with spinach and foie gras, grilled cuttlefish steak with a blood orange and almond butter sauce, sow hake with clams and sauce vert and finish with blueberry Bayonnais. Complimentary bubbles will be served.  Suggested wine pairings: White Txakoli and Red Riojas.
